I thought the follow would be Thanksgiving appropriate. I don’t have exact measurements but this is very easy to make.
Potatoes (I like little new potatoes)
Butter, melted
Olive oil
Salt
Pepper
Dried Rosemary
Scrub potatoes clean, don’t break the skin. One medium potato serves one person. Cut into to quarters or halves depending on size. Place loosely in a baking dish.
Add a few tablespoons of melted butter mixed with olive oil (approx. ¼ cup of oil for a pound of potatoes). Coat the potatoes well.
Roast at 350, turning occasionally until they are browned on the outside and tender inside, approx 1-1 ½ hours.
Halfway through the cooking add salt, pepper and rosemary to taste.
You can also try these with different spices or some roasted garlic.

These would actually work perfectly with my WCW recipe today. The recipes are perfectly complimentary. Great minds think alike.
I make something just like these, but I only use olive oil - the butter seems like a fabulous addition!

I'm obsessed with roasted potatoes. These look delicious! My mom used to make them with some olive oil and Lipton's onion soup mix. The onions would cook all crunchy. I love rosemary, however, and grow a plant on my terrace, so will have to whip these up.
yum yum, remind me when I get back to Rome we'll have you over for dinner so you can try Mr. R famous roast potatoes. He is v proud of them:-)

Jen - I bet using only olive oil is healthier. However, like Paula Deen and Ina Gartner I love butter.
